Roast diced almonds.
In a bowl or a saucepan, melt white chocolate over low heat or by double boiling, then let cool at room temperature. (Photo #1)
Beat whipping cream until creamy. It should be runny enough to drip from the whisk. (Photo #2)
Mix in half of the cream to the chocolate mixture, then mix in the rest. (Be careful - if the temperature difference is too big, they may not blend well.)
Fold in almonds, mix well, then let chill in the refrigerator. (Photo #3)
Place the mixture onto plates, then serve with cut seasonal fruit and/or chocolate sauce.
