Melt butter by double boiling or over low heat.
Place “hot cake” mix in a bowl. Mix in egg, sugar, the melted butter, coconut milk and cream, in that order.
Blend well until no lumps remain. (Photo #1)
Fill the baking cups with the batter 4/5 full. (Photo #2)
Cover the cups with aluminum foil. Bake in a preheated oven or toaster oven at 180 °C (365 °F) for about 30 minutes. They are done when a skewer inserted in the center comes out clean. (Photos #3 and #4)
