Belgian style standard sable cookie recipe. By adding cinnamon, you can make light spicy cocoa cookies. The walnuts can be chopped roughly or finely; depending on how you chop them, you can enjoy different textures.

Sift together flour, cocoa and cinnamon powder.

Roast walnuts and chop them finely.

Cream together butter, sugar and salt. Add egg yolk and 5 to 6 drops of vanilla essence and blend well. (Photo #1)

Mix in the sifted dry ingredients and the walnuts, in that order. (Photo #2)

Gather up the dough and wrap it in plastic wrap. Try shaping it into a block so that you can easily roll it out into a square later. Let rest in the refrigerator for about an hour. (Photo #3)

Roll it out to 5mm thick, then cut into 3cm squares. (Photo #4)

Bake in a preheated oven at 180 °C (365 °F) for about 15 minutes until brown. (Photo #5)
