Belgian style cookies, formed into coin shapes by hand. Combine vanilla essence and the same amount of water, then add the mixture to the dough to create a subtle vanilla flavor. If you prefer a richer vanilla aroma, combine 8g of vanilla essence and 2g of water instead of 5g of each.

In a bowl, cream together butter and sugar.

Combine water and vanilla essence. Add the vanilla mixture to the butter mixture and blend.

Fold in flour and blend. Press the dough together to form a clump. (Photo #1)

Using hands, form the dough into 3cm coin shapes (about 5mm thick). (Photo #2)

Bake in a preheated oven at 160 °C (320 °F) for about 15 minutes until light brown. (Photo #3)
