Chocolate Walnut Cake II

Belgian style chocolate walnut cake. To bring out the aroma, chop and lightly roast the walnuts in the oven. You can substitute the walnuts with almonds or hazelnuts. Alternatively, you can use all three kinds of nuts, 40g each.

Chop, then lightly roast walnuts in the oven. (Photo #1)

Chop chocolate into fine pieces. Combine the chocolate, butter and whipping cream and melt over low heat or by double boiling.

Combine eggs and sugar in a bowl and beat over low heat. When the mixture becomes lukewarm, remove from the heat and beat until heavy and creamy. (Photo #2)

Stir in the chocolate mixture to the egg mixture. Then fold in sifted dry ingredients and blend. (Photo #3)

Mix in chopped walnuts.

Pour the batter into a square pan to a depth of 2cm. Bake in a preheated oven at 180 °C (356 °F) for about 15 - 20 minutes until brown. (Photo #4)

After cooling, cut into 3cm square pieces. (Photo #5)
