Swiss style crispy chocolate patties, called “paletes au chocolat” in French. (“Palet” means a “puck” used in ice hockey. ) Milk or sweet chocolate is best suited for this recipe.

Any round molds will do for shaping the chocolate. Bottom part of cut paper cups are used in Photo #4.

Sift together flour, cocoa powder and almond powder.

Place solid butter in a bowl and pour in the sifted flour mixture. Using a scraper or a spatula, mix the ingredients while chopping up the butter. (Photo #1)

After chopping the butter into small pieces, rub the mixture with the palms of your hands into small chunks. (Photo #2)

Spread the mixture onto a baking tray. Bake in a preheated oven at 180 °C (356 °F) for about 10 to 12 minutes until golden brown.

Transfer the baked mixture into a bowl, add melted chocolate and stir. If the butter chunks are too big, chop them up before mixing with the chocolate. (Photo #3)

Transfer the mixture into round molds, up to 5mm in depth. Smooth the surfaces with a spoon. (Photo #4)

Refrigerate until solid, then remove the chocolate patties from the molds.
