Carrot Drop Doughnuts  

Carrot drop doughnuts using a microwaved carrot. Peeling is optional - you can microwave the carrot without peeling it. Press the cooked carrot through a sieve and combine with the other ingredients. Since the batter is sticky, use a spoon to drop the dough into oil. You can adjust the consistency of the batter with milk.

Wrap carrot in plastic wrap and microwave it until done.

Remove the carrot from the microwave and press it though a sieve. (Photo #1)

Place the carrot in a bowl. Mix in egg, milk and “hot cake” mix (pancake mix), in that order. (Photo #2)

Drop the batter from a teaspoon into heated oil and fry. (Photo #3)

When browned, drain on paper towels.

Sprinkle with confectioners’ sugar generously after cooling.
