German style cookies called HONIG SCHNITTEN in German. Originally, a variety of dried fruit and nuts such as orange peel, lemon peel, candied cherries and hazelnuts are used to make this type of cookie, but we only use orange peel in this recipe. Before baking, you can brush the cookies with marmalade generously for a more authentic finish.

Chop orange peel into fine pieces.

Combine honey, vegetable oil and sugar in a saucepan and place it over heat. Heat until the sugar dissolves and remove from heat.

Place sifted dry ingredients in a bowl. Mix in the chopped orange peel, beaten egg and the honey mixture (#2), in that order. (Photo #1)

Press the dough together to form a clump. Fill a paper-lined baking pan with the dough, 1cm thick. Let it rest in the refrigerator for an hour.

Cut the dough into 5cm squares as in the photo. (Photo #2)

Bake in a preheated oven at 180 °C (356 °F) for 15 – 18 minutes until brown. (Photo #3)
