Moist Marmalade Cake

German style moist cake with a rich marmalade flavor. Spread a generous amount of marmalade on top before baking. You can substitute marmalade with raspberry, blueberry or strawberry jam. Try making with different kinds of jam to enjoy different color variations.

Cream together butter and sugar.

Stir in beaten eggs, a little at a time. (Photo #1)

Add flour and blend well to make a smooth batter. (Photo #2)

Fill a square/rectangular tray or mold with the batter to a depth of 5mm.

Spread marmalade on top about 3mm thick, then cut into 4cm squares. (Photo #3)

Bake in a preheated oven at 160 °C (320 °F) for about 15 minutes until golden.
