Chocolate Chip Layer Cakes

Swiss style moist two layer cakes with a chocolate chip layer, topped by a chocolate layer. Let the cakes stand overnight before serving.

Melt chocolate over hot water. Allow butter to soften at room temperature.

Sift together flour and cocoa powder.

Add half of the sugar (30g) to eggs and blend.

Add the rest of the sugar (30g) to butter and cream together. (Photo #1)

To the butter mixture, stir in the melted chocolate, then the egg mixture. (Photo #2)

Fold in sifted flour mixture and blend. (Photo #3)

Allow butter to soften at room temperature. Sift together flour and almond powder.

Add sugar to butter and cream together. (Photo #1)

To the butter mixture, mix in eggs, the flour mixture and chocolate chips, in that order. (Photo #2)

Fill small round molds with the bottom batter up to almost half the depth.

Pour in the chocolate batter on top, up to 9/10 full. (Photo #3)

Bake in a preheated oven at 180 °C (356 °F) for about 8 to 10 minutes. (Photo #4)
