French style tartlets. Traditionally, the tartlets are baked with an almond cream dough filling, then topped with “confiture de fruits (seasonal fruit* cooked with sugar)”. *For tartlets, raspberries and apricots are often used.

Allow butter to soften at room temperature. Cream together butter and sugar.

Stir in beaten egg and blend well until it emulsifies. (Photo #1)

Add sifted flour and blend. Then press the dough together to form one clump. (Photo #2)

Roll the dough into small balls, then press the center with your index finger to make them concave.

Arrange the rim to shape into small tartlets. (Photo #3)

Bake in a preheated oven at 170 °C (338 °F) for about 10 minutes.

After cooling, fill the tartlets with strawberry sauce.
