French style cookies. The French word ¡Ègalette¡É refers to pancake, cake or cookie, characterized by a flat round shape. So ¡ÈGalette Simple¡É here means ¡Èsimple patty-shaped cookie¡É in French. You can make the dough and shape the cookies with your hands. Be careful not to melt the butter ¡½ just allow it to soften at room temperature, cream together with sugar, then mix with the other ingredients.

Add sugar to butter. Rub to combine the two ingredients. (Photo #1).

Add egg yolk and blend. (Photo #2)

Add flour and blend.

Press the dough together to form one clump. (Photo #3)

Place in the refrigerator for about half an hour, then roll into 2cm balls.

With your thumb, press the balls into patties. (Photo #4)

Place the patties on a baking tray. Bake in a preheated oven at 180 ¡ëC (356 ¡ëF) for about 12 minutes. (Photo #5)
